I adapted a Mens Health ground turkey recipe late last year in attempt to spend less money on lunch, eat healthier while not losing flavor. The following recipe is great because it’s easy and cheap to make. That and it tastes great.
2 tbsp. olive oil
1 lbs. ground turkey
1 bottle of a good rich pilsner beer
1 1/2 cup low sodium chicken stock
1 large yellow onion
2 tbsp. cumin
1 tbsp. black pepper
1 tsp. Kosher salt
5 cloves crushed whole garlic
1 28oz can crushed tomatoes
1 can diced tomatoes
2 cans black beans (washed and drained)
1/2 cup white corn kernels
2 banana peppers
Heat the olive oil and cumin, pepper, salt while browning the ground turkey.
Add the chopped onion once brown to marry the flavor.
Add the tomatoes, beer, chicken stock, garlic, black beans, corn
Throw 1/4 of a cup into the meat and onion mix and give a stir for about 5 minutes
Add the skillet contents to the crock pot
Add the peppers to the crock pot
Give everything a stir then top off with an extra tbsp. of olive oil
Cook on high for 1 hour
Cook on low for 1 hour
