This serves as a footnote to my earlier post on Heart Healthy Omelette’s. Since it’s Spring and thus asparagus season I’ve been cooking with that particular vegetable daily. I’m really digging putting a little olive oil in the pan with about the juice of 1/4 of a lemon and then searing the asparagus. It lets off that wonderfully fresh aroma while adding a smoky hint of what should be fire if I had a grill.
I’d also been craving a little red meat and since I’m leaning toward a restricted diet the answer was the expensive 90% lean beef. This was previously broiled on a wire rack to further reduce the fat impact.
No cheese, no added salt and lots of flavor.
